Buckwheat Noodles
Soba noodles, with buckwheat as one of the main ingredients, are getting more popular as a healthier alternative to normal pasta.
After trying various types, it seems that the korean version is most suitable for salad. After all, they already have a traditional dish (Bibim guksu noodles) with some ingredients similar to salad toppings.
During our initial rollout, soba noodles will be available as a basic topping. Soba noodles as a base, in lieu of lettuce/spinach, may be available soon.
Buckwheat is one of the few plant-based source of complete protein, which means it contains the nine essential amino acids which the human bodies cannot produce. Some studies suggest that it may lower blood cholesterol, improve circulation, and prevent varicose veins.
